Product Info:
The Calypso Bean (Phaseolus vulgaris) is a dramatic and beautiful bean. It is also called a Ying Yang bean because of the stark contrast of burgundy and white that flows along the bean's length. About 3/8 inch long with a silky smooth texture and mild flavor, this bean is sure to look great on any plate

Suggested Use:
Calypso Beans are a delicious addition to pasta salads, soups casseroles and stews. Cooked Calypsos combined with cooked rice make a wonderful stuffing for vegetables.

Ingredients:
Calypso beans.

Basic Preparations:
Soak overnight. Rinse and place in a large pot and cover with plenty of fresh water (more water preserves coloring of uniquely colored beans). Bring to a boil for 3 minutes, reduce heat, and simmer, covered, for 30-40 minutes or until tender. One cup dry yields 2-1/2 cups cooked.
