They are beautiful to look at due to their slightly speckled appearance. They are the dried seeds of a small shrub and are very common in South Asian cultures. Did you know that the word 'lens' comes from the Latin word for lentil The round, convex shape of a single lentil characterizes the definition of a lens. Suggested Use: Lentils break down after cooking which does a wonderful job of thickening soups. Lentils are often cooked with curry spices and served with rice in many south Asian countries. Ingredients: Eston lentils. (May contain a trace percentage of cereal grains) Basic Preparations: Lentils do not require soaking. Simmer 1 cup lentils with 4 cups water 12 minutes for salads, 20 to 25 minutes for main dishes. Skim the water while cooking. One cup dry yields 2 cups cooked.
