Product Info: Small Red Beans (Phaseolus vulgaris) are a plump, round bean with a deep brick red color. This bean is about 1/2" long with a mild flavor and firm texture and holds its shape well. Small Red Beans are also know as Habichuelas and Habas Pequenos Colorados. This is a bush bean rather than a vine bean. This is the bean which is famous in the Southern dish 'Red Beans and Rice.' Suggested Use: This bean can be used in the famous bean dishes, 'Red Beans and Rice' and 'Chile Con Carne.' It is a good substitute for any recipe calling for Kidney Beans. Small reds are also wonderful tossed with fresh basil and tarragon. Ingredients: Small red beans. Basic Preparations: Soak overnight before cooking. This bean has a fragile skin which will break open if the bean is boiled too hard, so simmer gently. Small red beans will cook in about 45 minutes. One cup dry yields 2-2/3 cups cooked. |
