Product Info: Squid (also called Calamari) is a member of the Cephalopod class in the Mollusk Family. The Squid uses it's black ink as a watery "Smoke Screen" to protect itself from predators. The ink is contained in a sac near the heart and is ejected when the animal is in danger. Long prized for its ability to color and flavor foods in Mediterranean cooking, Squid Ink is used in pasta and seafood dishes. Occasionally found in Caribbean recipes, such as Black Bean Soup. Suggested Use: A classic Spanish Dish is Squid served "En Su Tinta" in a sauce made from it's own ink. In Venice, a similarly prepared dish is served with Polenta. Squid Ink is used to create the popular Black "Squid Ink" Pasta, that is often served with shellfish and other seafood. Ingredients: Cuttlefish ink, water and salt. Basic Preparations: Only a very small amount is needed to flavor or color dishes. Use sparingly and adjust the amount as needed. |
