Product Info:
Swedish brown beans (Phaseolus vulgaris) are related to the Kidney Bean. Swedish browns are oval shaped, about 1/4 inch long, and a distinctive mustard brown color. They are particularly nice in stews because they will not break down after slight overcooking. These beans were introduced to the rest of the world by the Swedish, who originally cultivated them.

Suggested Use:
Swedish Brown Beans are traditionally served in a sweetened puree with smoked pork or game meats. They are beautiful and flavorful as a side dish with butter and chopped fresh parsley.

Ingredients:
Swedish brown beans.

Basic Preparations:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat, and simmer, covered, for 60 minutes or until tender. This bean produces foam, so skim the water regularly. One cup dry yields 3 cups cooked.
